Carrot Cake Pancakes

How I love a stack of hot of the griddle, drenched in syrup, fancy pancakes! Here's a recipe you are definitely going to want to add to the weekend mornings breakfast rotation. I think I could probably eat the entire batch of pancakes by myself =). They really do taste just like fluffy, sweetly spiced carrot cake, especially when they are smothered with Vanilla Cream or Cream Cheese Syrup. My obvious inspiration for these was the real thing, and I looked to my favorite carrot cake recipe to create this one. I would say for serving, one of the two syrups listed is a must, maple syrup just doesn't cut it with these. Also, I've never liked nuts in carrot cake only sprinkled over the frosting. Almond Poppy Seed Muffins

My two favorite muffins are blueberry muffins and almond poppy seed muffins. So a few weeks ago I set out to create an almond poppy seed muffin with the a fluffy muffin top, that had a combination of just the right amount of sweetness and almond flavor and a perfectly tender crumb. This was probably my fifth try but finally I did it =). The saying that baking is a science is definitely true. I tried different temperatures, different liquids and fats and different ratios. I'm definitely a self taught cook. Baking school could probably teach me a few things but I learn the hard way, through trial and error.  These poppy seed muffins are like the ones you get at the bakery with the delicious golden muffin tops that hang over the sides. Banana Bread Cinnamon Rolls

What do you get when you combine banana bread with cinnamon rolls? These incredible Banana Bread Cinnamon Rolls! A cinnamon roll and banana bread in one, how could these not be good? Then when they are slathered generously with cream cheese frosting and finished off with toasted nuts, all I can say is wow yum! This is breakfast done right. Lemon Belgian Waffles with Blueberry Syrup

I can't believe I've had this blog for nearly 10 months and I haven't posted one waffle recipe yet! Breakfast foods are some of my favorites to make (and blog) so I can't tell you why I've waited until now to do a waffle post.  In my home I make pancakes and french toast more often than waffles and I think one reason I prefer to do so is because with Belgian waffles you can only make one at a time. With pancakes and french toast I can make like 6 at a time. I've been wanting to buy one of the Belgian waffle irons that cooks two at a time. I have a long list of kitchen gadgets I want, you'd think the list would get shorter as I get more things but it just gets longer. I don't get into fancy clothes and home decor just fancy kitchen accessories =). I'm running out of kitchen storage space. Glazed Doughnut Muffins

Mmmmm doughnuts. Who doesn't love them? I love that this version comes in muffin form and tastes just like cake doughnuts without being fried! Therefore they are easier, healthier, with less frying mess to clean up and they taste just as good as the real thing. I saw this recipe over on Fine Cooking  and knew I had to try it. After reading through the reviews I made a few adaptations of my own to add flavor, increase muffin height, slightly change texture and opted to go for a doughnut glaze rather than a buttered cinnamon sugar coating.  Now the only problem I have is that I want to eat them for breakfast, brunch, lunch, linner and dinner. I'm excited to try other variations of this muffin in the future (like orange cranberry, lemon poppy seed, dulce de leche, blueberry or jam filled, chocolate or pumpkin). Best Ever Cinnamon Rolls

Okay, so this is officially the longest post I think I've ever done. It's taken a few days for this one and I've been thinking of what I'd put in these Cinnamon Rolls for a long time . I've been wanting to create my own cinnamon roll recipe for months and yesterday I finally decided it was time. So, let me explain a few things. The first batch I made was delicious but I knew it could be just a bit better. It was flavorful, tender, moist, fluffy. Basically it had nearly everything I could ever ask for from a cinnamon roll, except they just weren't big and grand enough. So today I woke up bright and early and made a second batch, and in my opinion, perfected them. Words nearly can't describe the goodness of these cinnamon rolls. I have never sunk my teeth into a cinnamon roll so good. I'm sorry, I know that sounds SO bragish but it is true. This is what I work for. These are why I love my job. Healthy Protein Smoothies

A healthy breakfast smoothie that tastes like dessert, I will take one of each flavor please. I'm a firm believer that healthy foods don't need to taste like cardboard, indeed they can be just as delicious as their unhealthy competitors. I don't know if I've mentioned before but I always like to have a healthy, low calorie breakfast and lunch, then at dinner I splurge a little and always have dessert. I exercise 6 days a week because I think it's a good balance for me. I watch Food Network while I run on the treadmill, it always keeps me going =). For breakfast I try to keep it around 300-400 calories 6 days a week (every Sunday I make a big brunch and splurge), so I like to have banana oatmeal, whole grain cream of wheat, whole grain cereal with almond milk or these smoothies with almond milk. Coconut French Toast with Coconut Syrup

Hello Breakfast! Ordinary French toast gets a major upgrade with a few exciting coconut additions. This fluffy french toast is made with creamy coconut milk and then it gets more real coconut flavor from pure coconut extract. Then it's cooked until perfectly golden and drenched with an irresistible, deliciously sweet coconut syrup (which again is full of real coconut flavor from coconut milk and extract) and to finish it's sprinkled with what more but the real thing, shredded sweetened coconut.  I listed below additional ideas for this french toast which I cannot wait to make in the future. I tell you no lie when I say this Strawberry Coffee Cake is the best coffee cake I've ever eaten! I love it! It makes sense that I like it so much because I adapted the recipe slightly from my favorite ever blueberry muffins recipe. I had some fresh strawberries in the fridge I needed to use up and I've been wanting to make a coffee cake recipe for some time so I decided why not strawberry? The combination of flavors in this cake is irresistible! You get a melt in your mouth, deliciously flavorful, buttery cake that sandwiches a layer of fresh, sweetened, juicy strawberries then to finish it off it's crowned with a generous amount of an incredible crumb topping (I've said it before, please don't substitute the Turbinado sugar, I think it's a must).
