Grilled Chicken Teriyaki Kebobs and a Great Find

Image
Check out this video... Say what?  Disposable  bakeware! Has anyone tried these yet? I'm dying to get my hands on some.  I absolutely love to cook and bake but I hate the cleanup. These things are genius. I definitely want these at the next dinner party I host. Thank you thank you Chinet for improving the world of cooking. Less stress due to less mess, yes please. I'd rather spend my time in the kitchen making delicious food rather than cleaning up after it. Bake, eat, toss, repeat =). Feast your eyes on the perfect summer dinner. These Grilled Chicken Kebobs are so tantalizingly delicious! Tender chicken, lightly charred fruit and veggies all finished off with a generous smothering of homemade teriyaki sauce, yes these are wow good! I know the servings I listed says 4 but I might recommend 3, my husband and I each ate about 4 skewers. They were so tasty I just couldn't stop, but they're mostly veggies right? Really these are quite healthy. They are low i...

Grilled Chicken with Balsamic Barbecue Sauce

Image
Are you looking for a wowing and simple grilling recipe for the upcoming 4th of July celebrations? Well, I'm quite certain you've found just what you are looking for. This grilled chicken smothered in a homemade Balsamic Barbecue Sauce simply said, is incredible! It is definitely up there with my favorite grilled chicken recipes. You get a tender chicken breast grilled to perfection that's basted with a flavorful, tangy, not overly sweet sauce that will have you coming back for more. I'd say this recipe is one you most definitely are going to want to try.  Don't be scared by the long list of ingredi ents in the sauce, most of them are pantry staples that you likely already have on hand.  I hope you enjoy and have a great 4th of July!  Grilled Chicken with Bals amic BBQ Sauce Yields about 6 servings Ingredients: 6 medium boneless, skinless chicken breasts halves (thighs would work great too) Salt and pepper, to taste Olive Oil for brushing grill 1 Recip...

Slow Cooker Chicken Tortilla Soup

Image
If you've been following I'm sure you know by now that I love a good slow cooker meal. Who doesn't? Meals prepared in a slow cooker yield flavorful and tender results with such minimal effort. This soup is definitely proof of that. If you don't have a slow cooker you could also make this on the stove top. I've also prepared it on the stove top before and added grilled chicken to it. If you choose to prepare it on the stove top add cooked chicken and allow the soup an hour to simmer over low heat so all the flavors have some time to develop and meld together.  I love Mexican food. I could eat it everyday. It has such unique and exciting flavors. Addictive flavors if you ask me. I hope you enjoy another Slow Cooker Meal from Cooking Classy =). Slow Cooker Chicken Tortilla Soup Yields about 5 servings Ingredients: 20 oz boneless skinless, chicken breasts halves 3 (14.5 oz) cans low-sodium chicken broth 1 (14.5 oz) can diced tomatoes with green chi...

Grilled Chicken Caprese Pasta

Image
If you love Italian food then this is a deluxe meal you will most definitely want to try! It is fancy, loaded with fresh goodness, creamy, hearty and beyond good! You get everything that's on your average Caprese Chicken and so much more, with the tender pasta, fire roasted tomato sauce, additional garlic (because I think they never put enough garlic in the store bought bottled spaghetti sauce, you could even add two cloves to the recipe), and yes of course the perfectly grilled chicken breast strips. This is a meal you are going to remember. If you wanted to  really  splurge you could even add in some cooked Pancetta or Bacon, yum! Sorry I didn't get many pictures (I wanted more pictures with the grilled chicken showing through it's kind of hidden in there), this was my families Sunday dinner and I couldn't resist that ooey gooey cheesy goodness long. It was calling my name. I looked over to my husband and the cheese was dripping clear from the fork near his mouth t...

Chicken Pot Pie Crumble - My Favorite Pot Pie

Image
You are looking at a must try comfort food meal. I was never a fan of chicken pot pie until a friend so kindly brought me this dish after I had my baby a few years ago. I'm fully in love with it! Rather then getting a surrounding of heavy pie crust you get a fluffy biscuit topping that will quickly have you loading your plate with a second round. In my opinion the topping is what makes this dish. It sets it apart from it's competitors, being loaded with Parmesan cheese, plenty of heavy cream, some black pepper and cayenne pepper for a slight kick, and I also added a little garlic powder (because how can I resist?). Then to finish, it's browned in the oven to beautifully golden perfection.  And the wonder doesn't just end at the topping. That is just the beginning. It's loaded with fresh, sauteed veggies, fall apart tender chicken which is all tossed in a creamy white sauce. This hearty dish would also be incredible made with leftover turkey from your upcoming Th...

Chicken Cordon Bleu Casserole

Image
Casserole. There I said it. I've always had a hard time with casseroles which is why I rarely make them. We've all had our fair share of bad casseroles, I know you know what I'm talking about. The kind where it seems like someone just threw whatever random leftovers they had sitting in the back of their refrigerator into one dish to create who knows what. I think those bad casseroles have given a bad rap to all casseroles. I wanted to call this Chicken Cordon Bleu Bake but that just sounds silly so I just need to overcome my fear of casseroles and call it what it is. My mom did make one casserole I often crave, it's a Chicken Broccoli Rice casserole, I will have to post it in the future.  This Chicken Cordon Bleu Casserole is a casserole to remember. I love the combination of flavors in chicken cordon bleu, but really who wants to spend all that time pounding, layering and rolling chicken? That's why I decided to create this dish. You simply layer everything in...

Crispy Pesto Parmesan Chicken

Image
My all time favorite dressing is Old Spaghetti Factory's Creamy Pesto Salad dressing. I've made  my own copycat version  so I can enjoy it at home all the time. It is definitely a family favorite. Not only do I dress my salad with it but I use it the same way you'd use ranch, for example, to dip fries or pizza in or to drizzle over baked potatoes. When I serve it alongside a breaded chicken I always end up dipping my chicken in it too. That is why I decided just to create a recipe that incorporated it right in from the start rather than just dipping it. This is similar to a baked ranch chicken only with a Pesto salad dressing and some Parmesan instead of ranch dressing. Technically it should probably be called Crispy Pesto  Dressing  Parmesan Chicken (because it doesn't use pesto, but rather pesto dressing) but that's far to long so I went with the shorter version. This chicken is so flavorful and delicious! I love the flavor of basil and it works wonders to th...
