Sloppy Joes

How on earth do you make a Sloppy Joe look classy? You don't =). They are just good ol' shloppy, yes sh loppy, deliciousness. Piled high and spilling over. It's impossible for any bun to fully retain all that saucy, meaty goodness. How I love a good Sloppy Joe. They may not be the fanciest meal but they are oh so scrumptiously tasty. I grew up eating them so I will always love them. These far outdo what comes in a can. Isn't everything better made fresh from scratch? Don't be scared of the long list of ingredients, other than the fresh peppers, most of them are ingredients you likely already have on hand. I kept adding a little of this and a little of that until I got this recipe just where I wanted it. If you are a cheeseburger fan, try them topped with a sprinkling of freshly grated cheddar cheese. A Simple Spaghetti Sauce

Spaghetti with meat sauce is one of my favorite Italian Classics. I grew up on it. I decided to post a second version in case you don't have 5 - 8 hours to tend my other recipe  as it simmers. I myself don't always have that much time to wait, so when I don't I often use a jar of marinara sauce and just doctor it up a bit. A jar of spaghetti sauce can definitely come in handy when needed, but to me they just lack flavor. All it takes is a few fresh ingredients along with some dried herbs and you've got a spaghetti sauce worthy of an Italian restaurant. I love a simple weeknight meal that pleases everyone and this simple sauce is sure to do just that. Enjoy! If you ask me, it only takes 3 ingredients (well 4 if you count the water) to prepare a perfect roasted turkey. In other words the perfect Thanksgiving turkey, the most important part of the Thanksgiving feast. We only have roasted turkey in my home about 5 times a year so I'm definitely not perfect at preparing one. That is why this time around I turned to Cook's Illustrated to follow their advice for brining and roasting turkey. I'm so glad I did as I achieved incredible results. I always thought it took plenty of fancy fresh herbs and a jumble of other ingredients to get a delicious turkey. That was definitely a misconception. If you ask me, some of those things can seemingly hide the delicious flavors of the turkey. All you need is a turkey, salt, water, a bit of butter along with a few easy steps and you'll have a turkey that is moist, flavorful and tender with a perfectly golden, crispy skin. Slow Cooker French Dip Sandwiches (5 minutes prep recipe)

Looking for an amazing, delicious and cheap dinner recipe for a busy day? Then look no further, this meal takes about 5 minutes prep work and it's flavor is phenomenal. It only takes is a few simple ingredients to spice up a cheap cut of beef. These french dip sandwiches are loaded with fall apart tender beef (if your roast isn't fall apart tender after cooking it 8 hours then you may want to consider a purchasing a new slow cooker, I used one once that had a gap between the lid and the slow cooker so it didn't have a good seal on it, therefor the roast cooked unevenly and wasn't anywhere near tender enough). Cheese is optional but I'd say it's a must, it perfectly compliments all the flavors of the beef.  Serve this sandwich with a side of kettle chips and you've get a dinner that couldn't get any simpler. Cheesy Bacon Ranch Potato Soup

I didn't know traditional creamy potato soup could get any better! I love a warm bowl of homestyle potato soup, which is why I decided to give it an upgrade. I grew up eating a lot of meat and potato  meals. I don't think my mom ever missed a Sunday dinner of roast beef and mashed potatoes (and NEVER the instant potatoes, I didn't even know they existed growing up). So, basically potatoes are one food I could never part with.  One of my favorite dinner sides is  Twice Baked Potatoes .   The inspiration for this soup came from those incredibly delicious Twice Baked Potatoes, those dreamy, creamy potatoes that are loaded with Cheddar cheese, sprinkled with browned crispy bacon and chopped green onions then they're finished off with a generous drizzling of creamy Ranch dressing. Yeah, all of that in soup form and this soup better be good right? It's definitely my new favorite potato soup, I'm not sure if I'll be able to eat the traditional plain old potato...

Mom's Navajo Tacos and Indian Fry Bread

I will always love Navajo Tacos. I've eaten them ever since I can remember. My mom makes the best Navajo Tacos ever (Navajo taco topping anyway =). She would cheat a little and use frozen Rhodes Rolls dough for the fry bread portion, which was also delicious but nothing compares to homemade Navajo fry bread. If you want to use frozen roll dough, all you have to do is fully thaw and rise the dough (according to directions on package) then fry it and top with the Navajo taco topping. This recipe I created for the fry bread really is incredibly simple though, you can basically make it in the time it takes just to prepare the roll dough for thawing.  I decided to use two leavening agents for the fry bread because I wanted the slight flavor yeast gives without having to have it rise for hours, but if you don't have yeast on hand you could just add another teaspoon of baking powder.  I would highly recommend you make 1 1/2 (or double) the recipe listed so you have left over fr...

Caprese Grilled Cheese

Anything that contains the word "Caprese" in the recipe title, I'm in. I love Caprese entrees and appetizers and I love a hot off the griddle grilled cheese. When the two are combined together you get an intensely delicious sandwich that you won't easily forget. Obviously you don't have to use fresh bread as I listed in the recipe, but I figure if you are going to fill a sandwich with fresh mozzarella, fresh tomatoes and fresh basil then you may as well keep a good thing going. Check out this video... Say what?  Disposable  bakeware! Has anyone tried these yet? I'm dying to get my hands on some.  I absolutely love to cook and bake but I hate the cleanup. With Thanksgiving just a few weeks away I'm so excited to start the month off right and be a part of such a fun virtual progressive dinner! So I want to say thank you to Mother Huddle for asking me to be part of such a great event! Now regarding this recipe, I need to begin by saying, Mom, you were right. Didn't want to admit it but you are. Cooking the potatoes in the smallest amount of water possible yields better results then covering them entirely with water when cooking them. I know we've had our separate opinions on this but I'd have to say I think the "Food Network" may not always be right :).  I made potatoes on Sunday, covering them entirely with water to cook, as I usually do because that's what I've always seen them do on Food Network and read in the directions of countless recipes, so I just assume that's the right method. Slow Cooker Chicken Tortilla Soup

If you've been following I'm sure you know by now that I love a good slow cooker meal. Who doesn't? Meals prepared in a slow cooker yield flavorful and tender results with such minimal effort. This soup is definitely proof of that. If you don't have a slow cooker you could also make this on the stove top. I've also prepared it on the stove top before and added grilled chicken to it. If you choose to prepare it on the stove top add cooked chicken and allow the soup an hour to simmer over low heat so all the flavors have some time to develop and meld together.  I love Mexican food.
